Made this delicious Pumpkin Gnocchi with Arrabbiata Sauce last night. It just makes it that bit fancier than a regular pasta and sauce. Super quick, super easy, super yummy, and perfect for a lazy Friday night dinner.
Pumpkin Gnocchi with Arrabbiata Sauce
Ingredients:
1 x Simply Wize Gluten Free Pumpkin Gnocchi (500g)
1 x Barilla Arrabbiata with Chilli Peppers (380ml)
3 tbsp Capers
6-8 Anchovy Fillets (they add a lovely saltiness)
Finely Grated Parmesan or Pecorino Cheese to taste
Method:
Fill and boil your kettle, pour boiling water into large saucepan and bring to the boil.
Pop the Gnocchi into the boiling water, these will take about 2 minutes or so to cook.
Meanwhile, in a small saucepan, put the Arrabbiata sauce, capers and anchovy fillets on to medium.
Once the Gnocchi is cooked, drain and return to the same saucepan, pour over the heated sauce, stir, add fresh cracked black pepper to taste and then serve with grated cheese.
This will serve approx. 3-4 people and is absolutely perfect with garlic bread!
